Lotte Hotel & Resort has entered the domestic kimchi market by launching Baechu Kimchi.
The domestic kimchi market is worth approximately 1.4 trillion KRW, with various food companies competing fiercely. On the 10th, Lotte Hotel & Resort stated, "Although Lotte Hotel & Resort Kimchi is a latecomer in the domestic kimchi market, it has the advantage of showcasing deep flavors through 'Mugunghwa,' the oldest Korean restaurant in a hotel in Korea with a 44-year history. Additionally, the culinary experiences accumulated through Korean cuisine dinners, including kimchi, such as the one for U.S. President Joe Biden last year, will serve as strengths."
Lotte Hotel & Resort explained that based on the philosophy of 'Yak Sik Dong Won,' meaning that medicine and food share the same origin, the taste of Executive Chef Kim Song-gi, who has been recognized as a master chef in Korea, was combined with Lotte Hotel & Resort’s unique recipes and high-quality ingredients to enhance the perfection of the kimchi.
Seasonal fresh napa cabbages sourced from optimal regions such as Yeongwol in Gangwon Province and Haenam in Jeollanam-do form the base, along with chili powder made from nutritious peppers harvested from fields directly managed by Lotte Hotel. The seasoning is mixed with top-grade anchovy sauce, yellow corvina sauce, freshly frozen raw shrimp caught at sea, and high-quality Shinan sun-dried salt that has been desalinated for four years. A special broth infused with dried pollack, barley shrimp, shiitake mushrooms, and kelp contains the secret recipe of Lotte Hotel’s chefs.
Artificial sweeteners were completely excluded from all ingredients to create a clean taste. Natural flavors and sweetness were drawn out from fresh ingredients such as tomato, hydrangea leaf tea, pear, and plum. Even the water was carefully selected. Alkaline natural bedrock water from Sancheong, Gyeongnam, was used to enhance the flavor of the kimchi.

The kimchi, announced on the 9th through Lotte Hotel & Resort’s official website e-Shop, will be sold for the first time through distribution channels on the 12th on Lotte Home Shopping’s 'Choi Yura Show.' It will also be available for purchase on Kakao Makers starting from the 14th. Next month, Lotte Hotel & Resort Kimchi will be available on a wider variety of e-commerce platforms.
