At Lotte Mart's newly opened tuna sashimi specialty store in Zeta Plex Jamsil, they are presenting a large-scale mart-style omakase that combines the 'order to made' method, where the chef selects the freshest 'chef's special' sashimi of the day and cooks it according to the customer's preference. In this store, customers can choose the sashimi's raw material and thickness through an electronic menu board, and the cooking methods?including sushi, sashimi, futomaki (Japanese seafood roll), and hako sushi (pressed sushi) made with premium bluefin tuna?are provided exactly as ordered by the customer.
According to Lotte Mart on the 16th, sales at the sashimi corner of Zeta Plex last month increased by more than 120% compared to the same period last year. Tuna sashimi, which can be enjoyed as a 'chef's special' with the 'order to made' method, grew by about 180%, receiving a hot response from customers.
The mart cited one reason why customers keep coming to the tuna sashimi specialty store as the transparent glass cooking workspace 'clean room' applying 'cold chain' technology. 'Cold chain' refers to a low-temperature logistics system that maintains low temperatures from production to packaging, transportation, and final consumption for temperature-sensitive products such as fresh food, preserving quality and freshness.
Lotte Mart extended this from logistics to the store. They applied cold chain technology to the kitchen of the Zeta Plex tuna sashimi specialty store, maintaining an internal temperature below 10 degrees Celsius, and designed a transparent glass 'clean room' so customers can directly observe the cooking process, enhancing trust in freshness and hygiene.
At Zeta Plex, various sashimi and sushi made with premium ingredients are offered. Salmon is directly sourced from Norway, ensuring freshness and cost competitiveness, and flatfish is only used from the Jeju-do Pyoseon-based 'Bohae Fisheries Cooperative' designated farm to secure raw material safety. They sell premium sashimi and sushi rarely found in regular marts, such as 'abalone sushi' made with domestic Wando abalone, sashimi and sushi using sea bream skin, avocado sushi, and sushi with longtail and sea urchin roe.
Meanwhile, the Zeta Plex seafood store features not only the tuna sashimi specialty store and clean room but also a 'panorama aquarium' at the store entrance and a 'stepped aquarium' for displaying live shellfish, emphasizing freshness and showcasing a futuristic store transformation.
