Makgeolli is always right. It’s good to drink in any season, in any weather, and with any side dish. Whether it’s cold or lukewarm, it tastes delicious.
However, there is a product that turns this perfect alcohol, Makgeolli, into jam. It is the ‘Makgeolli Marmalade’ from ‘Nyamnyam Jeju,’ a jam shop in Jeju Island. This Makgeolli jam is made by simmering Jeju-made Makgeolli at a low temperature for a long time.

Inside the strawberry milk-colored glass bottle is jam made from Makgeolli. As soon as the bottle cap was opened, the sour aroma typical of Makgeolli brushed past my nose. The jam has an ivory color with a drop of yellow mixed in, giving it a very similar look to kaya jam, but the scent was completely different. While kaya jam is sweet, Makgeolli Marmalade is dominated by a sour aroma.
The texture is firmer than plain yogurt but softer than kaya jam. It is much softer than regular strawberry or grape jam. If you want a thick and chewy texture, you can keep it cold in the refrigerator before eating, and if you prefer a softer texture, leave it at room temperature for a while. Since it softens quickly at room temperature, it is recommended to take it out of the fridge just before eating.
I spread Makgeolli Marmalade on a halved blueberry bagel. For the shoot, I took it out at room temperature, and within less than three minutes, I could see the texture change from thick to soft. It felt much more watery than regular jam, but it was not difficult to spread, and it did not drip off the bread after spreading.
I took a bite of the bread with Makgeolli Marmalade. Since it was eaten as a dessert, I wondered if the alcohol taste would be too strong and off-putting, but surprisingly, there was no alcohol taste at all despite being made from Makgeolli. Instead of the taste of Makgeolli, a very sweet dairy flavor was more prominent. It was like the richness of butter or cream combined with the sweetness of condensed milk. If you didn’t know it was made from Makgeolli, you might think it was a dairy product. When eaten alone, it was a bit rich, but paired with warm black coffee, the marmalade’s sweetness and the coffee’s bitterness harmonized beautifully, making it very enjoyable.
