[Asia Economy Reporter Minyoung Cha] Stay, the Michelin 1-star restaurant at the premium landmark hotel Signiel Seoul, announced on the 29th that it will participate in the world-renowned French gourmet festival "Go?t de France" on the 16th of next month. Stay's Go?t de France event, held over the past three years, has been fully booked every year.
Go?t de France is a gourmet festival commemorating the inscription of Reims cuisine as a UNESCO Intangible Cultural Heritage. It is meaningful as chefs around the world present French dishes on the same theme in their respective cities for one day each year, promoting cultural exchange. The event was inspired by the Epicurean Dinner held in 1912 by Auguste Escoffier, the highest authority in French cuisine, where the same menu was enjoyed worldwide on the same day.
The signature dish of this promotion, themed around France's Loire Valley, famous for its high-quality wine, is "Hairtail Mousse and Button Mushrooms." Inspired by freshwater fish dishes from the Loire Valley, this dish combines hairtail with cream, simmered until it puffs up to create an ultra-smooth mousse. It is served with button mushrooms, a representative ingredient of the Loire Valley, offering a delicate flavor.
The detailed menu for the promotion includes appetizers and seven courses: ▲ Fig and cherry pie with pear salad ▲ Hairtail mousse and button mushrooms ▲ Butter-grilled jondori (sweetfish) ▲ Premium grilled tenderloin with mashed potatoes ▲ Assorted cheeses ▲ Souffl? fritters with vanilla ice cream accompanied by warm chocolate sauce and black truffle. The price is 180,000 KRW per person.

Meanwhile, Signiel Seoul, celebrating its 3rd anniversary next month, is the only hotel in Korea to house two Michelin-starred restaurants, Stay and Vicheyna. Notably, Stay is the only restaurant in Asia operated by Yannick All?no, a Michelin 3-star chef, and has been selected as a Michelin Guide Seoul 1-star restaurant for two consecutive years. The "Pastry Library," Korea's first dessert demonstration corner where guests can taste desserts made on-site by Signiel Seoul's head pastry chef Maxim Maniez, adds to the delightful gourmet experience. The restaurant is also loved for its fantastic views from the 81st floor, the spacious feeling provided by a 5.5-meter high ceiling, and its interior accented with yellow tones.
