"Spring Seems to Be Coming" Seasonal Dining Menus Featuring Ingredients Like Naengi, Dallae, and Jjukkumi Released
Seasonal Menus Appear One After Another Amid Higher Spring Temperatures Than Usual
[Asia Economy Reporter Choi Saeng-hye] The dining industry is welcoming spring by launching various new menus using seasonal ingredients. As spring arrives earlier than usual due to higher temperatures, the supply of seasonal ingredients has become smoother, leading to more active releases of spring new menus.
Spring seasonal ingredients such as naengi (shepherd's purse), dallae (wild chive), and jjukkumi (webfoot octopus) are rich in unique aroma and flavor, as well as nutrients like taurine, vitamins, and minerals that help restore basic physical strength. Recently, with nationwide interest focused on boosting immunity to prepare for the spread of infectious diseases, demand for seasonal ingredients that combine both taste and nutrition is increasing.
According to the industry on the 8th, BonIF, which operates the porridge specialty store 'Bonjuk' and the Korean casual dining restaurant 'Bonjuk & Bibimbap Cafe,' introduced three seasonal limited menus using representative spring seasonal ingredients at about 1,500 stores nationwide: 'Spring Naengi Clam Porridge,' 'Spring Naengi Clam Gangdoenjang Bibimbap,' and 'Spring Jjukkumi Set.'
'Spring Naengi Clam Porridge' and 'Spring Naengi Clam Gangdoenjang Bibimbap' have been beloved spring delicacies since their first launch in 2015. They feature a harmonious blend of the fragrant spring herb naengi and the umami-rich clams. In particular, the 'Spring Naengi Clam Gangdoenjang Bibimbap' adds various textures with chewy clams and naengi cooked in a special gangdoenjang sauce, which is simmered to bring out a savory flavor.
The 'Spring Jjukkumi Set,' released following the popularity of the 'Gondre Tteokgalbi Set' unveiled last September, is the second set menu launched. It offers a generous serving of jjukkumi, rich in taurine, perfect for fatigue recovery during the season. The chewy jjukkumi stir-fried in spicy seasoning is served with crunchy bean sprouts and savory traditional seaweed, and can be enjoyed by mixing with rice or wrapping in seaweed according to personal preference.
At Bonjuk, you can enjoy the 'Spring Naengi Clam Porridge,' while at Bonjuk & Bibimbap Cafe, all three new menus are available.
CJ Foodville’s specialty noodle restaurant 'Jeiljemyeonso' launched two new spring menus under the concept of 'Delicious Noodles that Welcome Spring.' The 'Spicy Dallae Meat Noodles' features a spicy beef bone broth topped generously with sweet and savory grilled meat, enhanced by the fragrant seasonal dallae and spicy Cheongyang chili peppers for added umami. The 'Grilled Meat Mala Bibim Noodles' combines spicy and numbing mala sauce with smoky grilled meat, topped with a soft-boiled egg that can be broken and mixed evenly with the mala sauce, thin noodles, meat, and green onions for a delightful eating experience.
Both new specialty noodle dishes are available for delivery, allowing customers to enjoy them at home, work, or anywhere. Delivery orders can be placed through Baedal Minjok, Baemin Riders, Yogiyo, Foodfly, Coupang Eats, and Naver Easy Order.
SPC Group’s Italian casual restaurant 'La Grillia' has launched a limited spring new menu. Under the theme 'Feel the Spring,' the new menu features seasonal spring ingredients such as strawberries, jjukkumi, and asparagus.
Main dishes include 'Strawberry Salmon Salad,' 'Salmon Alfredo Cream Pasta,' 'Jjukkumi Aglio Olio,' 'Ricotta Cheese Flat Pizza,' 'Kielbasa Sausage Rose Pasta,' and 'Steak Cream Risotto.' There are also accompanying items like 'Strawberry Ade,' 'Strawberry Latte,' and 'Cheese Cream Tart.'
