"Fantastic Harmony of Fish and Vegetables"... Korean Dish 'Mulhoemyeon' Named Dish of the Year by NYT
"Seasonal Fish, Radish, and Cucumber Beautifully Entwined"
"Ruby-Hued Spicy and Chilled Broth"
The American daily newspaper The New York Times (NYT) has included the fusion Korean dish 'Mulhoe-myeon' in its list of '23 Best American Restaurant Dishes of the Year,' drawing attention.
On the 12th (local time), NYT stated, "While scouting restaurants across the United States this year, we selected the best ones," adding, "Every year, we eat hundreds of meals in numerous states to compile the list, but inevitably, there are restaurants that make us think, 'It would have been better if I had ordered two dishes,' or 'I wish it was closer to home.'"
San Francisco Fusion Korean Restaurant 'Mulhoe-myeon' in the Spotlight
This year, one of those is the Korean restaurant 'Bansang' located in San Francisco, with its dish 'Mulhoe-myeon.' Mulhoe-myeon is a creative dish featuring Korean-style cold raw fish soup served over noodles, topped with radish and cucumber. NYT praised it, saying, "In the ruby-colored spicy and cold broth, strands of capellini noodles beautifully intertwine with seasonal fish pieces, radish, and pickled cucumber."
They added, "Each ingredient's characteristics are distinct, yet they create a fantastic harmony in the mouth. It invigorates you no matter the season."
The restaurant 'Bansang,' which offers Mulhoe-myeon, opened last year in San Francisco's Japantown. It is operated by Korean chefs Eden Min and Jin Lim, who come from well-known restaurants in the western United States.
According to their website, 'Bansang' states that they want to serve guests with the same care as the royal and noble table settings of the Joseon Dynasty. The two chefs, in their early 30s, are graduates of Woosong University.
The restaurant has gained popularity in the western U.S. region right after opening, with its unique Korean cuisine that incorporates Japanese and French ingredients and techniques.
Chef Eden Min told local media, "I want to be an entry point for people who are new to or unfamiliar with Korean food to experience the taste of Korean cuisine."
