The Escape Hosts 'Asia Gourmet, Whiskey Vibe' Event
Palace de Shin, a modern Chinese restaurant at L'Escape by Chosun Hotel & Resort, announced on the 26th that it will hold 'Asian Gourmet, Whiskey Vibe' with Taiwanese whiskey brand Kavalan on the 1st of next month.
Palace de Shin is a modern Chinese restaurant that has been featured in the Michelin Guide Seoul for four consecutive years. It offers menus based on Cantonese cuisine that brings out the natural flavors of ingredients, combined with unique Korean elements. It is also a place where you can experience the latest trends in Chinese cuisine in Seoul through collaboration with Hong Kong's Mott 32 restaurant.
This collaboration dinner will present a total of eight courses proposed by Palace de Shin’s Chef Wang Eopryuk, including 'Kavalan Whiskey Truffle Dongpo Pork' made with 'Kavalan Distillery Select No.1.' Starting with appetizers such as 'Peking Duck Skin with Caviar and Foie Gras' to stimulate the palate, the menu also includes 'Sichuan-style Beef Dumplings with Qingpa Sauce' and 'Pearl Dim Sum.'
For the main dishes, three types of dishes will be prepared, including 'Charcoal-grilled Triploid Oyster,' 'Grilled Tilefish with Morel Mushroom Sauce,' and 'Kavalan Whiskey Truffle Dongpo Pork,' which is rich in Kavalan whiskey aroma. The meal concludes with 'Sea Urchin and Bokkeon-style Fried Rice with Gamtae' and dessert of 'Chestnut Cream Mousse and Pear Sorbet.'

Along with this, five special highballs and cocktails based on 'Kavalan Distillery Select No.1' will be served. The alcohol pairing will be conducted by guest bartenders Park Yong-woo, head bartender of Alice Cheongdam, selected as one of Asia’s Best Bars 50, and Kim Hyun-chul, bartender of Bar Pomme.
