Lotte Food Launches 'Shefood Sirloin Whole Tonkatsu'
[Asia Economy Reporter Lim Hye-seon] Lotte Foods announced on the 23rd that it has launched 'Chefood Pork Loin Whole Tonkatsu.'
'Pork Loin Whole Tonkatsu' is the first new product utilizing the newly expanded home meal replacement (HMR) line at Lotte Foods' Gimcheon plant, which was completed in April. Products such as dumplings and fried foods that were previously produced at outsourced factories are now being renewed through in-house production at the Gimcheon plant. Starting with the production of this whole tonkatsu, Lotte Foods plans to expand the production of handcrafted-style, high-quality convenience foods at the Gimcheon plant.
The pork loin whole tonkatsu features enhanced quality compared to existing tonkatsu products through the latest manufacturing equipment that improves the product's texture. The process involves vacuum low-temperature aging of the whole pork loin, repeatedly pounding it as if making handmade tonkatsu, and evenly tenderizing it with a meat hammer, preserving the thickness of the thick tonkatsu while delivering a soft and rich texture.
Since it is already fried, chef-quality tonkatsu can be easily prepared with simple air fryer cooking. In particular, it is fried in high-oleic soybean oil, providing a richer aroma and crispier texture.
Additionally, the product is individually packaged using packaging materials that adopt a green-certified printing method. The final packaging uses a paper case to make recycling easier.

Meanwhile, to expand HMR production, Lotte Foods invested a total of 93 billion KRW to newly expand and complete the production building at the Gimcheon plant in April. Dumplings and fried foods that were previously outsourced are now produced in-house, and in July of this year, an additional line capable of producing pork loin whole tonkatsu was installed to increase production capacity. Through the expansion of the Gimcheon plant and the HMR product lineup, Lotte Foods aims for a 19% growth in HMR sales, from 203.1 billion KRW in 2020 to 241 billion KRW in 2021.
