The company expects that the semi-prepared products with high cooking efficiency and recipes utilizing them will help alleviate labor shortages at meal service clients, improve food taste, and reduce utility costs such as water and electricity.
According to Samsung Welstory's own survey, about 75% of clients reported labor shortages, and hiring workers with high job proficiency was even more difficult. Accordingly, they selected 150 of the most preferred menus by meal service clients and developed a recipe solution that reduces the average number of cooking steps required to complete the menu by 50%.
For example, in the case of Seolleongtang, a complex process involving 10 steps such as simmering beef bone broth and boiling boiled pork can be completed in just 5 steps by using semi-prepared products like beef bone broth, sliced boiled pork, and pre-processed green onions.
Reflecting the operational characteristics of meal service clients who must provide different menus daily, Samsung Welstory included a variety of menu recipe information in the guidebook, ranging from Korean, Chinese, Japanese, Western, to single-dish menus. To facilitate practical use of the guidebook, item codes necessary for ordering ingredients, five taste stages (salty, sweet, sour, spicy, umami), and serving temperatures were also recorded in infographic form.
In addition to this guidebook, Samsung Welstory has also produced additional guidebooks for takeout and special menus. These will be showcased at the '2024 Food Festa,' the largest B2B (business-to-business) food and beverage industry expo, held at the aT Center in Seocho-gu, Seoul, on March 3-4 next month.
