Four Seasons "Akiraback Presents 'Jayeon Songi' Autumn Kaiseki Dinner Course"
Akira Back, the modern Japanese restaurant at Four Seasons Hotel Seoul, announced on the 16th that it will offer a kaiseki dinner course featuring natural pine mushrooms from Baekdusan and other seasonal autumn ingredients until November 30. Kaiseki is a high-end Japanese course meal where various dishes are served sequentially in small bowls.
Natural pine mushrooms are known as the "treasure of autumn" due to their unique aroma and flavor that cannot be found in any other mushroom. They are well recognized as the highest quality among edible mushrooms. Akira Back has enhanced the overall taste and flavor of the course by incorporating rare ingredients from both land and sea, such as two-horn Hanwoo beef, sea urchin roe, caviar, tuna, and abalone.
This dinner course, consisting of seven dishes, begins with Zensai, a traditional Japanese appetizer. Zensai includes bite-sized appetizers prepared using four different cooking techniques.
Next follows a premium sashimi platter featuring Honmaguro (tuna), grilled eggplant with a special oil sauce, and steamed lobster served with a mild sesame tofu sauce to stimulate the palate. The tender two-horn Hanwoo beef tenderloin is lightly grilled and served with natural pine mushrooms and yuzu-infused miso sauce to maximize its original flavor, capturing both taste and texture perfectly.
The meal is served in two styles: “Songi Goto Udon,” a light dish using Goto noodles, one of Japan’s three major udon varieties known for their firm and thin dried noodles, and “Crab Meat Hot Pot Rice,” made with rice mixed with snow crab innards topped with crab meat and salmon roe. For an additional 200,000 KRW, caviar can be added to the crab meat hot pot rice for an even richer flavor. Finally, the signature dessert Harumaki is served with tea or coffee, providing a delightful dining experience. The seven-course dinner is priced at 250,000 KRW per person, including VAT.
The course pairs perfectly with the French Ch?teau Lafon-Rochet 2019 vintage, available by the glass or bottle for a perfect marriage of flavors. Additionally, a variety of options such as Japanese or domestic sake, cocktails, distilled spirits, beer, and wine are available to suit individual preferences.
