Jeju Dream Tower Complex Resort Offers Premium Izakaya Omakase Experience at 'Yumeyama'

[Asia Economy Reporter Yuri Kim] Lotte Tour Development announced on the 6th that it has launched a premium izakaya omakase at Yumeyama, the Japanese restaurant in Grand Hyatt Jeju within the Jeju Dream Tower complex resort. This is part of a strategy to enhance and diversify food and beverage services in preparation for the full reopening of the economy.
A representative from Lotte Tour Development said, "Following sushi and teppanyaki, we are now offering izakaya omakase, allowing customers to enjoy three concept menus in one place through omakase. We will present the ultimate omakase experience where modern Japanese cuisine made with carefully selected seasonal ingredients can be enjoyed at a reasonable price."
The Yumeyama premium izakaya omakase was specially prepared by global star chef Kojima, formerly of Grand Hyatt Dubai and SLS Hotel Bahamas, adding a unique touch. It features seasonal premium ingredients combined with Chef Kojima’s signature recipes, including his own developed sauces and seasonings. The premium izakaya omakase (Full Moon Course) consists of seven authentic modern Japanese dishes.
The Jeju Hanwoo carpaccio is served with a special sauce made by the chef using aged lemon salt, Jeju green tea powder, and lemon juice to stimulate the palate. The course includes six premium sashimi pieces, four charcoal-grilled dishes, and four teppan-grilled dishes. Nagasaki champon and sushi are also included. Besides the Full Moon Course, the izakaya omakase can also be enjoyed as a regular course (Half Moon Course).
There is also a wide variety of beverages that pair well with the Japanese menu, including over 40 types of premium sake, highballs, and cocktails. Popular since its launch in January are the Hallasan soju cocktails, "Jeju Sling" and "Jeju Margarita."

Yumeyama offers Japanese dining with three concepts: izakaya, sushi, and teppanyaki, with a seating capacity of 159. It features private rooms that can accommodate up to 10 people for an exclusive dining experience. Operating hours are from 5:30 PM to 12:30 AM, and until 1:30 AM on Fridays and Saturdays (closed on Tuesdays and Wednesdays).
