"Reduced Salt Concentration to 1/20"... Mupungjidae Launches '0.3% Low-Sodium Anchovies'
[Asia Economy Reporter Eunmo Koo] Mupungjidae, a food drying and aging platform company, announced on the 1st that it has developed a “clean and non-salty low-sodium anchovy with a salt content below 0.3%” by applying semiconductor manufacturing equipment mechanisms to drastically reduce sodium content below the low-sodium standard set by the Ministry of Food and Drug Safety, and will sell it at Lotte Mart.
The low-sodium standard defined in the “Food and Drug Safety Notice” by the Ministry of Food and Drug Safety is less than 305mg per 100g, and Mupungjidae’s low-sodium anchovy is the only product that meets this standard. Since seawater salinity exceeds 3%, and a large amount of salt is added to prevent spoilage during drying and distribution processes, it was practically impossible for existing products using cold air, hot air, or natural drying technologies to meet the Ministry’s low-sodium standard.
Based on mechanisms applied in semiconductor manufacturing equipment and processes, Mupungjidae succeeded in developing a product that meets the low-sodium standard while maintaining the taste and nutrition of anchovies using its self-developed “Far Infrared Vacuum Dry Aging (FIVEDnA)” technology. Sodium reduces calcium absorption in the body, but Mupungjidae’s low-sodium anchovy lowers the salt content to 0.3%, minimizing calcium absorption reduction caused by sodium.
Anchovies dried with FIVEDnA technology are evenly dried both on the surface and inside, reducing concerns about spoilage of internal organs due to residual moisture, so they have less bitterness even when consumed without removing the internal organs. Also, since drying is done in an environment where heat, pressure, and wavelength are controlled while blocking external air, it is possible to preserve uniform quality for a long time.
