The Gupo Noodles cooking method development project is being carried out as part of the "Gupo Eum Urban Regeneration New Deal Project," which Buk-gu Office in Busan has been promoting since 2018 to revitalize the Gupo Station area.
Busan Institute of Science and Technology and Buk-gu Office held a "Tasting Event for Developing Gupo Noodles Cooking Methods Suitable for Modern Sensibilities" on the 18th in the Korean cuisine cooking practice room on campus. Attendees enjoyed the texture while tasting the newly introduced broth and ingredients of Gupo Noodles.
The core of this project is explained as the "Mil:Dang Project," which tells the historical background of Gupo, historically a wheat production area in Korea.
The "Mil:Dang Project" aims to develop a landmark and tourist resources unique to Buk-gu, Busan by implementing various food, sights, and activities themed around wheat in the Gupo Station area, and based on this, to revitalize the local commercial district.
To develop and commercialize Gupo Noodles, Buk-gu's representative food in the food sector, with a modern sensibility, a public-private-academic project linked with Busan Institute of Science and Technology and Gupo Yu Co., Ltd., centered on Buk-gu, Busan, has been carried out over the past year.
Gupo Yu Co., Ltd. is a village enterprise established by residents and merchants of Buk-gu, Busan, for community contribution, and plans to sell Gupo Noodles using the recipe developed through this project.
The new manufacturing method and recipe development of Gupo Noodles were undertaken by Professor Kang Gap-seok of the Hotel and Food Service Cooking Department at Busan Institute of Science and Technology.
Since April, Professor Kang, together with local food researcher Kim Jeong-sook, has developed cooking methods and broth and seasoning manufacturing methods using various ingredients based on traditional Gupo Noodles ingredients.
Starting with a tasting event attended by about 30 people including Buk-gu and Gupo Eum Urban Regeneration Field Support Center officials, local residents, and university officials, the product will enter full-scale production reflecting the evaluation panel's opinions.
The newly reborn Gupo Noodles will be sold from September at the first-floor restaurant of the Gupo Noodles Experience Center near Gupo Station.
Jung Myung-hee, head of Buk-gu Office, said, "Buk-gu, Busan, is preparing representative local food products by developing the Gupo beer 'Gupo Manse 329' independently, along with the development of Gupo Noodles, through the collaboration of public, private, and academic sectors."

She added, "The Gupo Eum Urban Regeneration New Deal Project is expected to become a model and efficient success case of urban regeneration projects based on the human and material infrastructure of public, private, and academic sectors, and will be a valuable future asset for Buk-gu residents as well as revitalizing the Gupo Station area."
