Truffle Cake's Popularity Leads to New Summer Menu
Shilla Hotel is introducing a new summer dessert. On May 2, Seoul Shilla Hotel announced the launch of a truffle-based dessert, "Treasured Moment, Truffle Ice Cream," at The Library, the lounge & bar on the first floor.
Seoul Shilla Hotel decided to release "Truffle Ice Cream" as a summer menu item, inspired by the growing demand for truffle desserts, including the truffle cake "The Taste of Luxury," which was introduced as a holiday cake last year and received great popularity. The Taste of Luxury, which was launched during last year's Christmas season, attracted attention for its price of 400,000 won. The newly released Truffle Ice Cream is priced at 60,000 won.
Truffle Ice Cream is made with black truffle and was inspired by truffles that grow underground. The concept of this dessert centers on the black truffle, often called the "treasure of the earth," and its appearance and texture are faithfully reproduced. The soil of the forest is represented with cookie crumble, and the green grass is recreated with herbs, visually expressing the look of truffles underground.
Special attention was paid to the flavor as well. To ensure a rich truffle aroma emerges the moment the hard chocolate is broken, the inside of the chocolate is filled with ice cream based on "Gimpogeum Rice," known for its glossy and chewy texture, and deepened with black truffle. The dessert also features jelly made from Ch?teau d'Yquem, a French dessert wine often called "liquid gold," allowing guests to experience both sweetness and the aroma of aged fruit at the same time.
Only rice milled on the same day at Seoul Shilla Hotel is used for Gimpogeum Rice. Truffles are stored with the rice to infuse it with a subtle truffle aroma. In addition, staff freshly grate truffle over the ice cream at the table, enhancing the original flavor and aroma of the truffle.
Other menu items to enjoy alongside include the dessert wine "Chateau Suduiraut Lions de Suduiraut" and the French brandy "Janneau XO Armagnac." Chateau Suduiraut Lions de Suduiraut is characterized by its bright acidity, rich sweetness, and elegant balance, which harmonize with the nutty flavor of Gimpogeum Rice. Janneau XO Armagnac offers a velvety yet intense taste, adding depth to the umami of truffle and the smoothness of the rice ice cream, making it an excellent pairing with the Truffle Ice Cream.
Truffle Ice Cream will be available in limited quantities per day until August 31 at The Library lounge & bar and the luxury whisky boutique & lounge "The Distillers Library" at Seoul Shilla Hotel.
Meanwhile, starting May 2, Seoul Shilla Hotel is also selling Apple Mango Bingsu. The price has been raised by 7.8% from last year (102,000 won) to 110,000 won.
