Flounder and Chicken Thigh Replace Red Meat... Korean Air Unveils 7 Special In-Flight Meals Tailored for "Slow Aging"
Korean Air announced on September 4 that it has revamped seven types of meal control menus offered as special in-flight meals. The airline introduced new ingredients and recipes to provide safer meals with more specialized recipes for passengers who require customized diets for health reasons.
The low-fat, diabetic, and low-calorie meals now contain less carbohydrates than previous menus. Instead, the amount of vegetables that raise blood sugar slowly has been increased, and a variety of colorful vegetables such as green, red, and yellow are used for both nutritional value and visual appeal. For meat, flounder or chicken thigh, which contain less saturated fat than red meat, are used.
The low-irritant meal is prepared by removing most vegetable skins to aid digestion and cooking them gently. Vegetables that may cause gas, oily ingredients, and strong spices are excluded. Reflecting passenger feedback, soft fresh fruits such as watermelon, melon, and pear have been added in addition to the previously offered banana.
The low-sodium meal ensures that the total salt content in sauces and seasonings per meal is kept at or below 1 gram (400 mg sodium). Instead of strong seasonings, unsalted butter, vegetable oils, and aromatic vegetables are used to enhance flavor.
For the gluten-restricted meal, rice flour is used instead of wheat flour when preparing bread and soup. In the lactose-restricted meal, all foods containing lactose are excluded and lactose-free alternatives are used. The soy milk previously provided for breakfast has recently been replaced with the increasingly popular lactose-free Greek yogurt.
After signing a work agreement with the nutrition team at Inha University Hospital in February, Korean Air spent over six months applying the latest clinical guidelines for major diseases such as diabetes, cardiovascular disease, and hypertension, with validation from experts. Popular dietary trends such as the "slow aging" diet, Mediterranean diet, and DASH (Dietary Approaches to Stop Hypertension) diet have also been incorporated into the meal control menus.

Korean Air's special in-flight meals are available to all passengers in First Class, Prestige Class, and Economy Class. Passengers can request these meals through the official Korean Air website or service center up to 24 hours before departure.
