View original image'Jajakmyeon' is a dish developed in 2022 by the Yeongyang-gun Our Food Research Association to discover local specialty foods and Yeongyang delicacies in connection with the birch forest in Jukpa-ri, Subi-myeon. Through the 2023 Yeongyang Specialty Food Restaurant Menu Development Pilot Project, it was introduced as a more popular 'Jajakmyeon' at Seokbo Myeonsarang, and a tasting evaluation meeting was held.
To represent the shape of a birch tree, wood ear mushrooms were added, and the noodles were kneaded using birch sap. These noodles were combined with jajang sauce to make 'Jajakmyeon,' with broth made from onions and cabbage to make Jakak-guksu (Jajak noodles), and with spaghetti sauce to make Jajak spaghetti.
