The Promotion Agency created the starter culture user manuals to ensure the effective utilization of the starter cultures it developed.
The manuals include characteristics of the starter culture additives, usage instructions, and methods for utilizing the starter cultures in the production of various fermented foods commonly made in Korea (such as jang, fermented liquor, vinegar, and yogurt). It is expected that farmers and companies will benefit from the manuals in producing foods with consistent quality.
The newly produced starter culture user manuals will first be provided to farmers receiving starter cultures through the free starter culture supply project within Sunchang, as well as companies participating in projects supported by the Ministry of Agriculture, Food and Rural Affairs. They will also be supplied free of charge to domestic individuals purchasing Sunchang fermentation starter cultures.
Choi Young-il, Chairman of the Fermentation Microorganism Industry Promotion Agency, said, “We hope that through the distribution of these starter culture user manuals, more users will be able to properly utilize Sunchang’s excellent fermentation microorganisms.” He added, “We will continue to promote various projects based on the outstanding microbial assets owned by the county to help farmers generate income.”
Meanwhile, the Promotion Agency is a specialized microorganism production institution that develops starter cultures for fermented food production using over 50,000 native fermentation microorganisms in its possession and commercializes them as starter culture additives for direct use by consumers (companies and individuals) in Korea.
