Sunchang Fermentation Microorganism Industry Promotion Institute Successfully Develops Fermented Rice Powder
The Jeonbuk Sunchang-gun Foundation for the Promotion of Fermented Microbial Industry (hereinafter referred to as the Foundation) announced on the 19th that it has recently succeeded in developing Sunchang fermented powdered rice using powdered rice flour developed by the Rural Development Administration as a wheat flour substitute.

Powdered rice (patent name ‘Baromi2’) is a special rice variety developed for the first time in the world by the Rural Development Administration. It has the same harvesting method and form as ordinary rice but possesses the characteristics of wheat, allowing it to be processed into bread, noodles, beer, etc., using wheat flour milling processes. It is a type of special rice that can potentially replace wheat flour in the future.
Utilizing this, the Foundation developed two types of Sunchang fermented powdered rice products?yeast powdered rice and lactic acid bacteria fermented rice?through advanced fermentation production lines involving microbial inoculation and cultivation, fermentation, drying, grinding, and packaging processes.
The efficacy of these two products lies not only in their ability to supply essential nutrients such as vitamins and minerals produced by fermented microorganisms but also in containing probiotics, which are immune-enhancing components, making them suitable as functional product processing materials.
In particular, these two products are expected to serve as functional raw materials in various food industries such as confectionery, baking, brewing, and health foods, becoming a growth engine for future food industries.
Currently, the fermented powdered rice produced by the Foundation has been initially supplied in quantities of about 1 ton to a company called Nuri Co., Ltd. in Jeollabuk-do. This company plans to commercialize various protein-enhanced products such as ‘protein-fortified rice powder yogurt’ using the fermented powdered rice.
Chairman Choi Young-il stated, “The fermented powdered rice developed by the Foundation will play an important role in achieving the county government’s goal of profitable agriculture,” adding, “Moreover, the Sunchang fermented powdered rice material is expected to become a stepping stone for new food business ventures in Sunchang in the future.”
