The Sangju Agricultural Technology Center in Gyeongbuk announced on the 28th that Chorok Dream, a Hongjam production and processing plant promoted as part of the '2020 High-Quality Functional Hongjam Production Technology Pilot Project,' has become the first in Gyeongbuk to receive HACCP certification in the insect processed food category.
HACCP is recognized worldwide as the most effective and efficient food safety management system. The United States, Japan, the European Union, and international organizations recommend applying HACCP to all food products.
Hongjam produced in Sangju, Gyeongbuk, is integrated from silkworm production to processing, and this system is known as a rare production process for Hongjam nationwide.
Hongjam is a method to consume the protein called fibroin inside the body of the 'ripe silkworm' (sukjam). The living 'sukjam' is steamed and cooked, then vacuum freeze-dried to produce Hongjam.
Hongjam contains about 70% abundant protein and various functional components such as amino acids, vitamins, and omega-3.
