All bakery menus at Nelbosco, including bread, cakes, and cookies, are baked daily by professional bakers in the baking laboratory using carefully selected ingredients. The bread varieties are differentiated in taste and deep flavor through a low-temperature aging method that blends various flours and ferments for a long time at low temperature. The representative products, ciabatta and pastry, use poolish dough, which adds only a minimal amount of yeast to a 1:1 ratio of water and flour and ferments for a long time, creating a resilient texture.
