[Asia Economy Honam Reporting Headquarters, Reporter Yoon Jamin] The Jeonnam Food Industry Research Center has accelerated efforts to revitalize the food industry by transferring patented technology effective in boosting immunity to food companies.

According to Jeonnam Province on the 17th, the research center recently signed an agreement to transfer patented technology for manufacturing starter culture kimchi using beneficial components of Jeonnam’s specialty green tea with Boksnae Village Agricultural Cooperative Corporation (CEO Lee Bakheng) located in Boseong, and has begun product commercialization.

The patented technology agreed upon this time uses patented lactic acid bacteria isolated from kimchi to maintain the efficacy of catechins, the main component of green tea, while reducing bitterness and enhancing functionalities such as antioxidant activity. It is especially effective in strengthening immunity, including anticancer effects.

Additionally, patented technology for manufacturing starter culture doenjang using Jangheung shiitake mushrooms and Gangjin oats will also be transferred for use by food companies.

Furthermore, to develop products utilizing Muan black onions, a recent business agreement was signed with BCH Food Co., Ltd., and full-scale research and development projects will be carried out.

The research project aims to standardize fermentation and extraction processes using onions and develop beverages and pill products with immune activation and gut health functionalities.

Onions produced in Muan account for 36% of the national production volume but suffer from severe price drops due to overproduction. If product development through future research projects is successfully promoted, it is expected to help stabilize supply and demand by reducing onion stock levels.

Kang Jongcheol, Director of the Agricultural Food Distribution Division of Jeonnam Province, said, “The transfer of this green tea starter culture kimchi manufacturing patented technology will be a new opportunity for the development of the kimchi industry using green tea,” and added, “If fermented black onion products are developed, the food industry utilizing onions is expected to advance to the next level.”
