Busan Ingredients and Stories, Introduction of 23 Recipes and Tasting of 11 Course Meals
Promotion and Distribution of Cooking Methods for Hotels and Restaurants, Utilization in International Event Banquets
On the 17th at 6:30 PM, Busan City will hold a public tasting event for the ‘Busan Food (B-FOOD) Recipe’ at the Bolero Hall of the LAVALS Hotel (located in Yeongdo-gu).
This public tasting event is the first occasion to showcase the ‘Busan Food (B-FOOD) Recipe,’ which the city has developed and finalized since February.
The ‘Busan Food (B-FOOD) Recipe’ is a project conceived through expert consultations and discussions to develop new and diverse dishes that highlight the unique characteristics of Busan’s local ingredients and incorporate stories unique to Busan.
There have been concerns that there is a shortage of Busan dishes used in banquets at international events and that Busan cuisine has been overly focused on Korean traditional food.
In February, the city formed a recipe development team consisting of six members, including gourmet columnist Park Sang-hyun and culinary experts and chefs from various fields.
Through on-site investigations of local ingredients and case studies, the development direction was set, and the team members developed recipes individually, conducted joint tests, and went through internal tasting and evaluation stages, ultimately completing 23 recipes by the end of May.
The event will proceed in the order of ▲opening remarks ▲introduction of the development process video ▲introduction of the developed menu recipes and stories ▲and tasting.
About 20 people are expected to attend, including Lee So-ra, Director of the Citizen Health Bureau of Busan City; Lee Jong-hwan, member of the City Council; Kang Ui-gu, head of the Busan Consular Corps; Lee Jeong-sil, president of the Busan Tourism Organization; Lee Tae-seop, president of the Busan Tourism Association; Kang In-jung, president of the Busan City Branch of the Food Service Industry; Kim Cheol, president of the Busan Hospital Association; cooking researcher Hong Shin-ae; Chef Kang Leo; Chef Park Seong-bae of the Seoul Michelin restaurant ‘Onjium’; Park Yong-jun, CEO of Samjin Foods; representatives from local newspapers; and officials from Bar&Dining magazine.
Attendees from various fields, including chefs and gourmet experts, will listen to detailed explanations of each recipe and sequentially taste 11 course dishes prepared directly by the development team chefs.
The city plans to actively promote and distribute the 23 newly developed recipes through various channels.
Starting with this event, the 23 recipes will be promoted through media such as social networking services (SNS), and efforts will be made to distribute them so they can be tasted at the event venue, hotels, and nearby dining establishments.
The recipes are expected to be used as official menus at international events held in Busan, attract visitors by representing Busan’s signature dishes, and contribute to revitalizing Busan as an internationally recognized gourmet city and food brand.
