This year's kimchi cabbage faced difficulties in seedling cultivation due to the impact of the early-season typhoon, causing a slight delay in the planting period. Although there are concerns about damage from the autumn drought, the growth condition so far is relatively good.
This year, the cultivation area of Haenam cabbage is 3,071 hectares for autumn cabbage and 1,711 hectares for winter cabbage, with an increase in autumn cabbage cultivation and a decrease in winter cabbage compared to last year.
Most of the cabbage currently being harvested is processed into salted cabbage, and the harvest of kimchi cabbage will be in full swing from mid-November.
Haenam cabbage is grown for 70 to 90 days, longer than the short-season cabbage in the central region, resulting in dense cabbage heads. It grows in yellow soil exposed to sea breeze, making it rich in nutrients. When made into kimchi, it does not easily become soggy and has a sweet, crunchy texture, earning it the reputation of a premium cabbage.
Recently, in addition to fresh cabbage, the processing of salted cabbage has been increasing, and about 10% of the production is expected to be sold as salted cabbage.
Meanwhile, Haenam County recommends that general households make kimchi after mid-November, as the large temperature difference enhances the cabbage's unique sweetness and firmness.
In this regard, Haenam County's online shopping mall Haenam Miso is conducting pre-orders and sales of salted cabbage for kimchi. Through pre-orders, customers can receive high-quality salted cabbage on their desired dates, and starting from the 3rd, some kimchi ingredients will be available for purchase at discounted prices through Haenam Miso.
