Only red chili peppers produced by farms within Imsil are eligible for purchase, and through pilot field operations, proud farmers directly evaluate and select the best chili pepper varieties, managing flavor through pungency analysis.

Imsil is located in a mid-mountain area at an altitude of 250 to 300 meters, with large temperature differences between day and night and 188 hours of sunlight. The produced chili peppers are rich in nutrients, have high sugar content, and thick skins, resulting in high-quality chili powder.
The chili’s a*sta* (color and hue of the chili) is high, giving kimchi a bright red and appetizing color, and with an appropriate capsaicin content, it offers a spicy flavor that anyone can enjoy.

The highest quality red chili peppers purchased through strict inspection are washed three times with bubbles and sterilized once to remove foreign substances and dust.
In particular, the latest drying machine from Germany’s Hans Binder is introduced, enabling fast drying in 3 hours and 20 minutes, reducing stress on the chili peppers and minimizing damage to taste, color, and nutrients.
Additionally, foreign metal removal, ultraviolet sterilization, and X-ray metal detection are used to remove and manage foreign substances, microorganisms, and pathogenic bacteria. Production is carried out in automated hygienic facilities designated by HACCP, making it even more reliable.
