Easy and Delicious! Irresistible Tofu Noodle Recipe

If you are interested in gluten-free or vegan diets, or are managing your weight, you may have heard of Tofumyeon at least once. It is a product made by processing tofu into noodle shapes instead of flour, helping to reduce excessive carbohydrate intake. I started eating Tofumyeon because I felt I was consuming too much flour-based food, and compared to flour noodles, it feels lighter on the stomach, so I often reach for it. Here is a simple Tofumyeon recipe that I have recently been really into.
Tofumyeon Napolitan
Ingredients
Tofumyeon, 3 tablespoons ketchup, 1 tablespoon oyster sauce, whole garlic, preferred vegetables (bell peppers, onions, mushrooms, etc. anything works), chicken breast sausage, fried egg (optional)
Instructions
① Thinly slice the garlic and saut? it in oil until it turns golden brown.
② Stir-fry various vegetables and chicken breast sausage cut to desired size together.
③ When the ingredients are cooked, add ketchup and oyster sauce and stir-fry.
④ Add rinsed Tofumyeon in cold water and stir-fry, then finish by topping with a fried egg and baby greens.
Who knew that tomato and tofu would be such a great combination? Even though Tofumyeon is used instead of pasta noodles, it doesn’t feel out of place at all. It has a lighter taste than pasta made with tomato sauce, but the tanginess of ketchup and the nuttiness of tofu blend well, making you want to keep eating. Breaking the soft-boiled egg yolk and dipping the noodles slightly enhances the smooth flavor. I also like that it doesn’t get soggy easily, so you can save leftovers or pack it for lunch.
Soy Sauce Bibim Guksu (Tofumyeon ver.)
Ingredients
Tofumyeon, 1.5 spoons soy sauce, half a spoon oligosaccharide syrup, half a spoon vinegar, half a spoon minced garlic, 1 spoon sesame oil, sesame seeds, seaweed flakes
Instructions
① Mix soy sauce, oligosaccharide syrup, vinegar, and minced garlic to make the sauce.
② Rinse Tofumyeon once in cold water.
③ Mix the sauce into the Tofumyeon and then drizzle sesame oil over it.
④ Sprinkle seaweed flakes and sesame seeds to finish.
Tofumyeon Soy Sauce Bibim Guksu takes less than 5 minutes to prepare. The convenience of not having to boil the noodles separately is a big plus. It’s perfect for days when you don’t even want to bother boiling noodles. Like the Napolitan pasta introduced earlier, this dish involves rinsing the Tofumyeon in cold water and mixing it directly with the sauce without cooking, so you can better enjoy the chewy texture of the tofu noodles themselves. In terms of taste, it is much nuttier than soy sauce bibim guksu made with thin wheat noodles. Although the noodles are thicker than somyeon, the sauce is well absorbed, and especially the harmony with sesame oil is excellent. If you want a richer flavor, you can also top it with a soft-fried egg.
