Pulmuone Launches First Plant-Based Meat Product, 'Dubu Tender'

On the 26th, Pulmuone Foods announced the launch of ‘Tofu Tender,’ its first plant-based meat product that contains 0 mg cholesterol and is rich in protein, catering to consumers who prioritize health and the environment after COVID-19.
This new product is Pulmuone’s third ambitious release following the launch of the ‘Tofu Noodle KIT’ and the high-protein plant-based ‘Tofu Bar,’ in line with the long-term roadmap announced last month when the company declared itself a leader in plant-based foods. Starting with Tofu Tender, Pulmuone plans to continuously release innovative new plant-based meat products such as hamburger patties, competing with global food companies both domestically and internationally.
Pulmuone’s Tofu Tender is made from a new concept of high-protein fibrous tofu, containing 0 mg cholesterol, and replicates the texture and chewiness of meat, making it a convenient home meal anyone can enjoy deliciously.
Tofu Tender is an innovative product that uses newly developed fibrous tofu with a distinct grain to replicate the appearance of chicken tenders and the texture of chicken meat. Fibrous tofu is made by cooling soy milk extracted from soybeans, adding a coagulant, and then undergoing multiple processes such as freezing, thawing, and molding to form a consistent ‘grain’ structure.
This unique tofu, composed of thin layers stacked in a fibrous form, was developed to provide a texture similar to chicken breast as well as the chewiness of typical meat. Thanks to the grain structure, sauces penetrate well, making it more suitable as a cooking ingredient than regular high-protein tofu. Its protein content is also about twice that of regular tofu, making it nutritionally beneficial.
Made primarily from high-protein fibrous tofu, Tofu Tender contains 12 g of protein per 100 g (22% of the daily recommended intake) and has 0 mg cholesterol as it is made from plant-based ingredients. In comparison, typical chicken tenders and chicken nuggets contain about 33 to 60 mg of cholesterol per 100 g. Another advantage is that it can be easily cooked using an air fryer.
