Jeonnam Food Industry Research Center Promotes Technology Transfer of 'Jonggyun Doenjang Patent'
[Asia Economy Honam Reporting Headquarters, Reporter Yoon Jamin] The Jeonnam Food Industry Research Center announced on the 24th that it has signed an agreement to transfer patented technology for manufacturing starter culture doenjang using local specialties to companies in the province and will proceed with product commercialization.
The patented technology for manufacturing starter culture doenjang using shiitake mushrooms, a specialty of Jangheung-gun, and rice oats, a specialty of Gangjin-gun, will be transferred to Jangheung Food Co., Ltd. (CEO Cheon Jeongja), a representative social enterprise of Jangheung-gun, and Gangjin Doenjang Agricultural Cooperative Corporation (CEO Choi Hyangsim), a representative village enterprise of Gangjin-gun, respectively.
Jangheung shiitake mushrooms are a representative specialty of Jeonnam, accounting for 32% of the national dried shiitake production. They contain beneficial substances such as beta-glucan, which is effective in cancer prevention, cholesterol reduction, and hypertension prevention.
Gangjin oats are known as a superfood with higher essential amino acid and beta-glucan content compared to other grains, and Gangjin-gun is promoting a premium rice oat project.
The transferred technology uses a patented Bacillus strain with excellent protease activity derived from traditional doenjang to produce high-quality shiitake mushroom and oat doenjang with low sodium content and good immune activation.
This patented technology is the result of research and development conducted last year by the Food Industry Research Center as part of the community business revitalization project, supported by the Ministry of Trade, Industry and Energy and Jeollanam-do to promote social economy in Jeonnam.
The Jeonnam Food Industry Research Center is accelerating product development research that social economy enterprises, which face difficulties in new product development due to small scale and lack of research personnel, can utilize.
Shin Samsik, director of the Jeonnam Food Industry Research Center, said, “We hope that the transfer of this patented technology for manufacturing shiitake mushroom and oat doenjang will serve as a foundation for the development of Jeonnam’s fermented food industry and the social economy in the food sector.”

Meanwhile, in May, the Jeonnam Food Industry Research Center also transferred technology for manufacturing green tea starter culture kimchi using Boseong’s specialty green tea to a village enterprise located in Boseong-gun.
