Samgyeopsal is delicious no matter how you eat it. There are so many things that double the flavor when paired with samgyeopsal, such as ssam vegetables, ssamjang, kimchi, seasoned soybean sprouts, green onion salad, doenjang jjigae, and naengmyeon. If you go to eat samgyeopsal and have to choose just one, what would you pick? With a generous heart, I’ll exclude salt, pepper, and rice. Because there has to be at least 0.01% saltiness. It’s delicious no matter how you eat it, but ssam vegetables must never be missing. When you put savory samgyeopsal on fragrant ssam leaves and put it in your mouth, it’s fantastic. You might ask if ssamjang is essential for ssam, but if you have lettuce, perilla leaves, and even danggui, you can fully enjoy samgyeopsal without rice or ssamjang.
